Appts. for scoring the upper surface of uncooked loaves of bread comprises knives (10) mounted in a chassis (3) with a supporting shaft (1). The knives are attached to an arm (9) which is in turn mounted on a slide (6) which can move along double guide rails (5). The height and angle of the knives can also be adjusted by adjustments on the slide. An isolator (15) operates according to whether the chassis (3) is tipped in relation to a location frame (12). The device can be stored in a wall mounted unit including a cup into which the cone shaped end (2) of the support shaft can be inserted. The unit includes a cleaning vessel. Air and electricity feed lines are attached to the device via the cone.
