摘要 PURPOSE: Provided is a manufacture method of glutinous-barley noodle by mixing glutinous-barley containing abundant amylopectin, dietary fiber, beta-glucan and the like, with wheat flour. CONSTITUTION: The manufacturing method of glutinous-barley noodle comprises the steps of: preparing 68.1-76.1% of wheat flour; mixing it with 20-28% of white glutinous barley for 10-15 minutes; adding water of 20-30 deg.C to the mixture then kneading it for 5-7 minutes; maturing the dough at 30-35 deg.C for 7-8 hours; and molding the matured dough into noodle strips.
