<p>PURPOSE:To enable the sterilization of an ice-cream freezer in a short time in high efficiency, without imparting scorch smell to the ice-cream, by heating an ice-cream mix in a cooling chamber up to the sterilization temperature using electromagnetic radiation heating in combination with hot refrigerant gas sent from an evaporator of a refrigeration system connected to the cooling chamber and keeping the mix at the temperature by controlling the electromagnetic radiation heating. CONSTITUTION:A mix which is a raw material for ice-cream such as soft cream is supplied from a tank 2 to a cooling chamber 3 and heated up to the sterilization temperature by using an electromagnetic radiation heating coil 20 in combination with a hot refrigerant gas circulated to an evaporator 17 of a refrigeration system connected to the cooling chamber 3. The temperature of the mix is maintained nearly at the sterilization temperature at least for a time necessary for sterilization by controlling the electromagnetic radiation heating. The ice-cream freezer can be sterilized by this process.</p> |
