Method for operating a thermoform packaging machine and corresponding machine

The method involves forming a packing body using a film (9), and filling the packing body with food (18). A cover film (11) i.e. plastic film, is formed, and the packing body with the food and the formed cover film are guided into a heat sealing station (3) of a thermoform packing machine (1). A space between the packing body and the cover film is evacuated, and the space is aerated by gas or gas mixture using adjustable pressure. The packing body is closed by the cover film for producing a package (16), where the cover film exerts force in the food during aeration of the space. An independent claim is also included for a packing machine, comprising a heat sealing station.
