The present invention relates to a method for making blueberry noodles. Specifically, the method for making blueberry noodles of the present invention comprises the following steps: a first dough preparation step for mixing wheat flour, salt, and water to prepare first dough; a second dough preparation step for adding a blueberry extract and blueberry juice to the first dough, followed by kneading to prepare second dough; a step for putting the dough in a molding machine to mold the dough into noodles; a low-temperature treatment step for cooling the molded noodles; and a drying step for drying the noodles treated at a low temperature. When blueberry noodles are made by the method of the present invention, the blueberry noodles give a rich flavor and taste of blueberry; and can sufficiently contain excellent materials in blueberry, thereby giving functionality to the blueberry noodles through an anti-oxidative material or the like, such as anthocyanin, contained in the blueberry noodles. The sensory characteristics, such as color, texture, and taste, of blueberry noodles per se are excellent, thereby making delicious noodles. |
