PROBLEM TO BE SOLVED: To provide oil and fat-containing foods containing sugar alcohol and excellent in development of sweetness.SOLUTION: There is provided a sweetness modifier for oil and fat-containing foods containing sugar alcohol which contains, as an active ingredient, triacyl glycerol having middle chain fatty acid having 6 to 12 carbon atoms as a constituent fatty acid. There is provided an oil and fat-containing food containing sugar alcohol which contains sugar alcohol and oil and fat, and the sweetness modifier for oil and fat-containing foods containing sugar alcohol. There is provided a sweetness modification method of the oil and fat foods containing sugar alcohol making the content of triacyl glycerol having the middle chain fatty acid having 6 to 12 carbon atoms as a constituent fatty acid in the oil and fat in the oil and fat-containing foods containing sugar alcohol at 0.5 to 100 mass%.SELECTED DRAWING: None |
