The present invention relates to a small koji fermenting apparatus which steams grains when preparing Korean sauces such as soy sauce, soybean paste, red pepper paste, etc., and breeds Aspergillus to produce enzymes. The apparatus of the present invention can ferment a small amount of koji, and enables a user to easily use while moving to a variety of places. That is, the apparatus of the present invention comprises: a circular fermentor provided with an open cover formed at an upper portion thereof; an air conditioning apparatus which supplies hot air to the circular fermentor, and is installed on a duct to include an air conditioner, which receives moisture from an intake damper, an exhaust damper, a circulation damper, a heating unit, a fan, and a water supply tank to maintain the inner temperature of the circular fermentor by circulating or discharging the inner air of the circular fermentor to the outside thereof; and an air cooling apparatus which is installed on an intake damper side of the air conditioning apparatus, and cools the introduced air by being pipe connected to a cold water tank for cooling the outside air by a refrigerator to cool and supply the outside air, and includes a cooling unit for supplying the cooled air to the intake damper. The circular fermentor, the air conditioning apparatus, and the air cooling apparatus are installed on a trolley which is provided with wheels at the lower portion thereof, and have the size of smaller than 3 (width) * 3 (length), thereby being easily used while the user is moving. The circular fermentor: can perform fermentation of less than 30 kg of koji; has an observation window installed thereon, having a heating wire coupled to the cover so as to enable the user to observe the inside thereof; and is configured to have the height of lower than 2.5 m as being installed on the trolley. |
