A METHOD OF MANUFACTURING A D-PSICOSE CRYSTAL

Disclosed in the present invention is a method of manufacturing D-Psicose crystal having a purity of 98% (w/w) or more, and a grain size of MA 200 or more. The method comprises: removing impurities from a D-Psicose solution to obtain a purified D-Psicose solution; concentrating the purified D-Psicose solution; cooling the concentrated D-Psicose solution to 30-40°C through a heat exchanger; pre-crystallizing the D-Psicose solution of 30-40°C to obtain a maskette; and crystallizing using the pre-crystallized maskette. By using the method of the present invention, the D-Psicose crystal having a form which is pure and suitable for industrial application is able to be prepared by an economical crystallization process from the D-Psicose solution without using an organic solvent.
