In the course of preparation of mince for microbial stabilization the biologically active ingredients in the form of milled tissue or oil extract of sea hydrobionts: Corbicula or Ascidium are added. Hydrobiont tissue is added when grinding meat raw material in amount of 3% to mince mass, and oil extracts of hydrobionts are introduced simultaneously with application of milk, egg powder and salt in amount of 1-3% to mince mass.
