FIELD: food industry.SUBSTANCE: invention relates to meat processing industry, in particular to production of sausages. In the course of preparation of mince for microbial stabilization the biologically active ingredients in the form of milled tissue or oil extract of sea hydrobionts: Corbicula or Ascidium are added. Hydrobiont tissue is added when grinding meat raw material in amount of 3% to mince mass, and oil extracts of hydrobionts are introduced simultaneously with application of milk, egg powder and salt in amount of 1-3% to mince mass.
