摘要 The present invention relates to a meat treatment process for a cold chain system, which renders a meat vendable and available to consumers right after a series of treatment processes, and which also prevents the meat from degradation and improves the quality of the meat. To achieve the above object, the present invention provides a meat treatment process for a cold chain system, comprising the following steps: cutting pieces of meat, such as beef or pork, being fed(S10); washing the cut meat (S20); air-washing the washed meat (S30); drying the air-washed meat (S40); refrigerating the dried meat (S50); cutting the refrigerated meat into finer pieces (S60); air-washing the finer pieces of meat for a second time (S70); removing foreign materials from the meat which was air-washed for the second time (S80); packaging the meat from which the foreign materials were removed into individual parts (S90); and aging the individually packaged meat parts at low temperatures (S100). The individual meat parts being packaged in S90 are packaged in two layers, of which an inner layer packaging is made of an air-permeable material while an outer layer packaging is made of an air-impermeable material, and the low-temperature curing in S100 is carried out in multiple stages at varying temperatures.
