<P>PROBLEM TO BE SOLVED: To provide collagen peptide in which an unpleasant smell such as a collagen smell is eliminated and an unpleasant taste is prevented from being left, and a production method therefor. <P>SOLUTION: A production method for collagen peptide, collagen peptide obtained by the production method and a method for eliminating an unpleasant smell and an unpleasant taste of the collagen peptide are provided. The production method for collagen peptide is characterized by performing enzymatic treatment on collagen, then adding a smell remover to a resultant rude peptide liquid and stirring the peptide liquid for a fixed time at 40 to 90°C. As the smell remover to be added, it is preferable to use one or two or more kinds selected from the group consisting of activated clay, activated carbon, alumina, silica gel, acid clay and diatomite and, in particular, when adding a mixture of activated clay and activated carbon as the smell remover, it is appropriate that the ratio of activated clay and activated carbon is 3:1 to 1:3. <P>COPYRIGHT: (C)2013,JPO&INPIT |
