PROBLEM TO BE SOLVED: To provide sweetener compositions having reduced bitter off taste, the compositions comprising a milled mixture of a carbohydrate and a high intensity sweetener, and to provide methods of preparing the same.SOLUTION: There is provided a sweetener composition comprising a milled mixture having a particle size of 5-100 μm of rebaudioside A and erythritol, wherein the rebaudioside A is present in an amount of 0.10 wt.% to 50.0 wt.% of the milled mixture, bitter off taste of the sweetener composition is reduced compared to a non-milled mixture having a particle size greater than 190 μm of the rebaudioside A and the erythritol, and the rebaudioside A is present in an amount of 0.10 wt.% to 50.0 wt.% of the non-milled mixture. Also provided is a method of preparing the sweetener composition. The carbohydrate includes erythritol, sorbitol, maltodextrin, mannitol, xylitol, maltitol or isomalt.SELECTED DRAWING: None |
