SHELL EGG PASTEURIZATION SYSTEM AND METHOD

PROBLEM TO BE SOLVED: To provide: a method in a shell egg pasteurization system for pasteurizing shell eggs not only at optimized bath temperatures, but also for optimized dwell times in the respective zones in the bath depending on the egg size and weight and the starting temperature of particular batches of eggs; a data acquisition and reporting method for confirming that each batch of eggs is pasteurized in accordance with a predetermined protocol.SOLUTION: A batch processing control system controls the time and temperature in which batches of shell eggs are held in a pasteurization bath 114 in accordance with a predetermined pasteurization protocol for designated egg size and start temperature. The predetermined pasteurization protocol is statistically verified to optimize batches of eggs having the designated size and start temperature. The system also includes a reporting software that verifies that the batch has been pasteurized according to the statistically verified protocol.SELECTED DRAWING: Figure 4
