<P>PROBLEM TO BE SOLVED: To provide a method for producing higher unsaturated fatty acid glycerides containing higher unsaturated fatty acids such as docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) in high concentrations. <P>SOLUTION: The method for producing higher unsaturated fatty acid glycerides in which higher unsaturated fatty acids are concentrated and are included in large amounts comprises reacting a lipase with oil and fat in the presence of a polar organic solvent to suppress hydrolysis efficiency of the higher unsaturated fatty acids, removing the lipase, water, the polar organic solvent, glycerol and a free fatty acid or the free fatty acid and a fatty acid lower alcohol ester from a mixture obtained by reaction and concentrating a plurality of higher unsaturated fatty acids in acylglycerol, in the method for producing the higher unsaturated fatty acid glycerides containing the higher unsaturated fatty acids in large amounts, comprising hydrolyzing a raw material oil and fat containing the higher unsaturated fatty acids by using a lipase and concentrating a plurality of higher unsaturated fatty acids. <P>COPYRIGHT: (C)2013,JPO&INPIT |
