The present invention relates to an apparatus for producing noodles, including: a dough former for mixing a highly viscous dough by mechanically rubbing and mixing a mixed body of water and grain having 100 % of purity and no or less viscosity; and a former for producing noodles by pressurizing the dough produced from the dough former. A viscosity-forming cap is arranged on an outlet of the dough former to stop the movement of dough discharged from the dough former under high pressure, to move the dough backward, to reverse the direction of the dough forward, and to discharge the dough thereafter. In particular, the viscosity-forming cap is prepared on one end of the dough former, and thus non-viscous grain or grain with low viscosity including corn, rice, barley, and buckwheat containing almost zero gluten, which is a kind of insoluble protein, can obtain viscosity and elasticity by repetitively applying high mixing pressures thereto. The noodles produced from the above-mentioned grain, even when not mixed with flour or other viscous materials, can be prevented from being easily severed, and also taste and texture thereof can be improved. |
