摘要 <P>PROBLEM TO BE SOLVED: To provide a rice-processed material which adds value to high-amylose rice, easily obtained at low cost and having characteristic physicality. <P>SOLUTION: The rice-processed material is obtained by adding more than 1.5 times the amount of water to the high-amylose rice, heating the mixture, and subjecting the thus-obtained pasty material to mechanical agitation. A method for producing the rice-processed material is provided. A processed food such as confectionery, substantial food for principal food, side dish, food for aged persons, low-GI care food or diet food is provided.
