PURPOSE: A method for extracting matured using microorganism is provided to enhance yield of vitamin antioxidative material by promoting microorganism proliferation. CONSTITUTION: A method for extracting matured herb rood using microorganism comprises: a step of repeating freezing and thawing to modify sponge(porous of sponge phase); a step of promoting fermentation microorganism proliferation by making semisolid media containing 0.3-0.5% of agar; a step of performing solid phase direct fermentation of matured herb root using microorganism and a step of chelating oligomization mineral of ionized protein of repolymerization mineral.
