PROBLEM TO BE SOLVED: To provide a method of manufacturing a flavorful, crispy potato snack product that is directly edible.SOLUTION: A method of manufacturing a dry french fried potato snack product is provided including a process for preparing potato pieces, a process for frying the potato pieces in a first frying process, a process for cooling the fried potato pieces to temperatures less than about 100°C, a process for frying the cooled potato pieces in a second frying process, a process for freezing the fried potato pieces to temperatures ranging from about -60°C to about -150°C, and a process for freeze-drying the frozen potato pieces to reduce their residual water content. |
