[Class 49] In the production from minced meat of a peptonic extract by the use of juice or pulp of fruit, such as that of the Carica Papaya, the juice, or pulp, before being mixed with the meal, is defecated by treatment with Ca (OH) 2 and CO 2 and filtering. The liquid is poured on to the meat in the proportion of, say, 20-40 per cent by weight, the mixture is heated to 38-44‹C with gentle agitation for, say, 3 or 4 hours, the temperature is increased to over 70‹C and the mass filtered, and aromatic substances and salt are added to the liquid which is then concentrated and sterilized by heating in an autoclave. Alternatively the defecated fruit juice may be dried to powder form by projecting it against a hot plate, and aromatic substances and/or salt may be added to the powder. |
