The freeze-dryed pollack is prepd. by (a) pulverizing sodium ascorbate and tocopherol mixt. into 0.01-0.1 mm diameter, (b) adding 10-50 wt.% of the obtd. powder into the phospholipid and stirring, and mixing with 0.1-1.0 wt.% of essential amino acid, (c) adding natural surfactant and distillated water into the mixt. and high-speed stirring to obtain the phospholipid waterdrop, and (d) spraying the obtd. waterdrop and smoking soln. into the pollack, and freeze-drying at -15 - 35 deg.C and 5 mmHg or less pressure for 3-9 hrs..
