The present invention relates to a slice meat cutter which can easily recover residual meat. The slice meat cutter can easily recover and reuse the residual meat generated while meat such as ribs are sliced and reliably support the meat such as the ribs to obtain meat slices with a uniform thickness. The apparatus includes: a body (100): a cutting target mounting unit (200) including a base table (210) installed at the body to have a cutting target arranged thereon and at least one fork (220) which is arranged on the base table to fix the cutting target arranged on the base table; a cutting means (300) which is installed at the body and slices the cutting target arranged on the cutting target mounting unit; and a residual meat recovering means (400) which separates residual meat generated when the cutting target is cut by the cutting means (300) apart from the cutting means and the cutting target and stores the residual meat. The residual meat recovering means (400) includes: a compressed air supply means; an air nozzle which is installed at the cut position of the cutting target and sprays compressed air supplied from the compressed air supply means to the cutting means in order to separate the residual meat from the cutting target and the cutting means; and a residual meat storage tank which has a structure of a container with an open top and is arranged in the body to store the residual meat separated from the cutting target and the cutting means by the air nozzle.
