The present invention relates to jajangmyeon (noodles with black soybean sauce) using fast-fermented bean paste, which is prepared by the following steps: preparing fast-fermented bean paste by steaming soybean, injecting Bacillus sp. to the steamed soybean, and fermenting the soybean for 2 to 4 days; preparing fast-fermented bean paste sauce by stir-frying a mixture obtained by mixing 15 to 60 wt% of the fast-fermented bean paste, 5 to 15 wt% of pork, 15 to 30 wt% of onion, 5 to 10 wt% of green onion, 5 to 10 wt% of carrot, and 5 to 10 wt% of green chili, in 5 to 10 wt% of oil, and aging the stir-fried mixture in a sealed container for 2 to 6 days at temperatures of 0 to 4°C; and mixing 55 to 65 wt% of boiled chopped noodles with 35 to 45 wt% of the fast-fermented bean paste sauce. |
