摘要 PROBLEM TO BE SOLVED: To provide a production method and a production system for fruit wine using a surface progress freeze concentration method, the method is excellent in storage property of solutes in fruit juice and facilitates a device configuration relatively.SOLUTION: A production method of fruit wine comprises: a step for acquiring concentrated juice by the surface progress freeze concentration method; and a step for acquiring fruit wine by subjecting the acquired concentrated juice to alcohol fermentation. The surface progress freeze concentration method forms a single large ice crystal, and taking of solutes (nutrient component and flavor component) in the ice crystal is performed in a manner that the components are non-selective. Component balance of the solutes included in the concentrated juice (second concentrated juice) is almost equal to that included in the juice before concentrated, and excellent in storage property of the solutes, quality deterioration of the fruit juice is prevented and flavor can be enhanced. In the invention, the concentrated juice acquired by using the surface progress freeze concentration method is subjected to alcohol fermentation, the advantages of the concentrated juice are utilized as what they are, in the fruit wine with good quality.
