The present invention refers to a process for obtaining milk derivatives of low molecular weight by thermal changes of low temperature, amongst which are Alpha lactalbumin and Beta lactalbumin as food supplements and elements for forming Bamlet and Hamlet complexes. The process comprises the following stages: freezing and unfreezing the milk at low temperatures, performing the protein dialysis with molecular breaking, concentrating the milk derivative of low molecular weight diluted in distilled or bi-distilled water. Optionally, freezing the milk derivatives of low molecular weight diluted in distilled or bi-distilled water at temperatures ranging from-16°C to -20°C for being stored and then purified. |
