<P>PROBLEM TO BE SOLVED: To provide a new surfactant having a new molecular structure and function using 2, 3-dihydroxy propionic acid (glyceric acid) expecting application to a food field as a compound providing a hydrophilic group. <P>SOLUTION: The new surfactant is made by ester-bonding one molecule of a fatty acid as a hydrophobic group to a hydroxyl group of the 2-position of 2, 3-dihydroxy propionic acid (glyceric acid). <P>COPYRIGHT: (C)2013,JPO&INPIT |
