The present invention relates to a germination device for germinating coffee beans by using detoxified sulfur water, and a method of processing germinated coffee beans by using detoxified sulfur water to enable the germinated coffee beans to be used for coffee drinks. The germination device by using detoxified sulfur water comprises: a mixer which is installed to mix water supplied from a water purifier with additional detoxified sulfur to supply detoxified sulfur water; a detoxified sulfur water tank which is connected and installed to the mixer, and receives and stores detoxified sulfur water therefrom; a water sprayer which receives detoxified sulfur water from the detoxified sulfur water tank, and supplies and sprays detoxified sulfur water onto a germination vessel; a germination vessel which is positioned at a lower portion of the water sprayer, and in which a drain part is formed at a lower portion of the germination vessel, a perforated plate is arranged on an upper portion of the drain part, and raw coffee beans are placed on the perforated plate; and a drain tank which is positioned at a lower portion of the sprouting container, and recovers used detoxified sulfur water through a recovery pump to supply the same to the detoxified sulfur water tank. In addition, the method for processing germinated coffee beans by using detoxified sulfur water comprises: a germination step of germinating coffee beans by a water spraying method using detoxified sulfur water; a washing step of washing germinated coffee beans obtained from the germination step, and removing moisture therefrom to obtain washed coffee beans; and a drying step of drying the washed germinated coffee beans to obtain dried coffee beans. |
