Method and device for boning pieces of the legs of slaughtered animals, such as turkeys or cattle, sheep, pigs or other poultry or larger animal, in which - the leg section is held in place at one end of its bone ends, - the holder is oriented with the piece of leg held therein so as to obtain a suitable position, - a force is exerted on the piece of meat or part thereof so as to remove meat or meat part in the longitudinal direction of the leg piece, according to which method the efficiency of the operation is increased without damaging the meat.
