<P>PROBLEM TO BE SOLVED: To provide a method for producing bean curd refuse croquette, intended for improving a moldability of croquette and reproducing taste and palate feeling similar to those of potato croquette. <P>SOLUTION: This method for producing the bean curd refuse croquette comprises a process S1 of making bean curd refuse ground slurry by grounding a mixture which is obtained by kneading bean curd refuse 1 and water of a weight almost the same as that of the bean curd refuse 1, a process S2 of dewatering the ground slurry and making bean curd refuse ground paste, a process S3 of mixing minced meat with the ground paste to make croquette dough, and a process S4 of making raw croquette through forming coating which contains wheat flour and bread crumbs on the surface of the croquette dough. Cellulose and hemicellulose of the cell wall of the bean curd refuse are mashed by grinding the bean curd refuse to make the cell components of the bean curd refuse flow out to outside the cell. As a result of this, the ground bean curd refuse has high viscosity to make a delicate condition, and it is possible to improve a moldability as croquette, and reproduce taste and palate feeling similar to those of potato croquette. <P>COPYRIGHT: (C)2009,JPO&INPIT |
