PURPOSE: A producing method of dried kimchi using a decompress-drying process is provided to secure the original taste, flavor, nutrition, color, and structure of kimchi. CONSTITUTION: A producing method of dried kimchi using a decompress drying process comprises the following steps: producing seasoned kimchi having the sweetness of 7-8.5Brix, the acidity of 4.2-4.5HP, and the saltiness of 1.4-2.2%(S10); cutting the seasoned kimchi into 3-4cm(S20); dehydrating the cut kimchi(S30); layering the dehydrated kimchi on a drying tray, and inserting the drying tray into a drier for drying(S40); cooling the dried kimchi at room temperature(S50); and packaging the kimchi after checking the quality(S60,S70). The drier includes a circulating fan inflowing external air into the drier, and a pressure reducing fan discharging the air inside the drier to the outside. |
