摘要 The present invention relates to a method for producing kimchi. In particular, lactobacillus is cultured in raw ingredients forming a seasoning of kimchi, and a seasoning is produced by using raw ingredients in which lactobacillus is cultured, so kimchi can be produced by mixing the produced seasoning with salted cabbage. To this end, the method according to the present invention comprises the steps of: separating lactobacillus from a produced kimchi liquid; culturing the lactobacillus by using raw ingredients constituting a seasoning of kimchi; mixing a seasoning of kimchi with a lactobacillus cultured liquid cultured by using the raw ingredients; and producing kimchi by mixing the seasoning mixed with the lactobacillus cultured liquid with salted cabbage. Meat juice, sugar, and seaweed paste are mixed with the raw ingredients.
