A process for producing ammonia or ammonium from an organic material, comprising: fermenting an aqueous medium comprising organic material in the presence of a mixed bacterial population capable of ammonification, in a bioreactor, wherein the fermenting is under conditions, and for a sufficient period of time, to produce a fermentation product that comprises ammonia or ammonium; wherein the organic material comprises nitrogenous compounds suitable for conversion to ammonia or ammonium and wherein the mixed bacterial population is substantially similar to an isolated mixed bacterial population of S1 (CBS Accession No. 136063), wherein the substantially similar mixed bacterial population has a correlation coefficient of at least 0.90, relative to S1.
