Provided is a water and oil type fryer which is easy to discharge foreign materials inside a frying container to the outside and is capable of automatically supplying water. The fryer of the present invention comprises: an outer casing (10) having an outer see-through window in a front side thereof and an opened upper portion; a frying container (20) which is installed inside the outer casing, has an inner see-through window (28) mounted in a position corresponding to the outer see-through window (16), and contains water and oil therein; a floating matter discharge port (30) which is installed in a boundary between water and oil in the frying container; a cooling tube (29) which is installed in an upper portion of the floating matter discharge port in the frying container and in which a cooling fluid is circulated through the outside; a heater (22) which is installed in an upper portion of the floating matter discharge port in the frying container in order to heat oil; and a water supply tube (40) which is connected to the frying container that corresponds to a lower portion of the floating matter discharge port and is capable of supplying water from the outside to the inside of the frying container, wherein the water supply tube (40) is opened and closed by a solenoid valve (42) based on the temperature of water which is measured by a water temperature sensor (32). In addition, the present invention is configured to realize a double protective device by establishing a link between a single of an oil temperature sensor (24) and an overheating preventer (26) in order to prepare for an event where a predetermined oil temperature of a user is overheated as a control panel (13) is not normally operated. |
