The present invention relates to a preparation method of Kimchi containing tomato concentrate and, more specifically, to a preparation method of Kimchi comprising: salted Chinese cabbages as a main ingredient of the Kimchi; Kimchi seasoning as a minor ingredient; and 3-6 wt% of tomato concentrate relative to the salted Chinese cabbage, thus having a high content of a glutamic acid which, in particular, improves the taste and flavor of Kimchi and a high content of lycopene having anticancer effects and providing improved taste, flavor and texture. |
