摘要 <p>The present invention relates to a method for manufacturing a salt-fermented oyster with high stability of storage quality. According to the present invention, the manufacturing method of the salt-fermented oyster comprises: an oyster preparing step (S1); a soaking step (S2) of soaking the prepared oyster of the previous step (S1) in a saltwater; a first fermentation step (S3) of removing gas generated in a fermentation process of fermenting oyster from 5 to 10°C, after adding minor ingredients containing one or more gum species selected from xanthan gum, guar gum, and carrageenan to the salted oyster obtained from the previous step (S2); and a second fermentation step (S4) of removing gas generated in a fermentation process fermenting oyster from 5 to 10°C, after adding red pepper powder to the obtained output from the previous step (S3).</p>
