According to the method of the present invention, moisture is added into dried and pulverized rice flour to have 28 to 32 parts by weight of moisture with respect to 100 parts by weight of glutinous rice flour, and the glutinous rice flower is sealed, cooled, aged, and heated through a high pressure steamer to be dried and wet-heated. Dough is produced by mixing the wet-heated glutinous flour with starch, warm water, salt, chitosan, and dried albumin, and Naengmyeon noodles are molded by extruding dough using an extruder. According to the present invention, Naengmyeon noodles produced by wet-heating dried and milled glutinous flour may have improved strength. Moreover, chitosan and dried albumin are added, thereby improving strength of Naengmyeon noodles and reinforcing nutrition.</p>
