<p>PROBLEM TO BE SOLVED: To obtain coffee powder by pulverizing coffee beans, and, to obtain a strong taste component not been known heretofore when it is used as the one for taste enrichment.SOLUTION: A freezing pulverization step where a roasted coffee bean is frozen with liquid nitrogen, and, in the frozen state, is pulverized till the cell wall of the coffee bean is broken is practiced to produce coffee powder for taste enrichment adding bitter, particularly, bitter taste and astringency to food products by a freezing pulverization method.</p> |
