A method of producing a coated comestible comprises applying (e.g. by rolling or dusting) a dry powder comprising starch and a leavening agent to the food (e.g. fish stick, meat, vegetable or fruit) and then applying (e.g. by dipping or curtain-coating) a batter comprising starch, a leavening agent and water. Preferably the coated comestible is again coated with a powder coating followed by a batter coating. The powder and batter coatings may comprise wheat flour, maize flour, gelantized cornflour, sugar, whey, non-fat dry milk, dried egg, monosodium glutamate, salt, sodium bicarbonate and sodium aluminium phosphate. The coated comestible may be fried and used or fried, frozen, stored and heated before use. |
