The present invention relates to a method for producing a peanut sprout enzyme extract using protopectinase. The present invention relates to the method for producing the peanut sprout enzyme extract using the protopectinzse by filtering, decompression-concentrating, and freeze-drying the peanut sprout after a peanut sprout is obtained by germinating a peanut seed and then the obtained peanut sprout is processed with the protopectinase. The present invention minimizes the loss of nutrients of the peanut sprout.
