The invention relates to a method for producing a concentrated extract comprising phenolic compounds and having a high antioxidant activity from fruit obtained from apple thinning, said method comprising: freezing the fruit resulting from apple thinning; grinding the fruit; mixing the ground fruit with an extraction solvent; extracting the phenolic compounds from said ground fruit by exposing same to the mixture of solvents for at most 6 hours with continuous stirring; filtering the mixture in order to obtain a liquid extract of phenolic compounds; concentrating said extract in a rotary evaporator under vacuum; and freeze-drying same.
