<p>The present invention relates to a noodle dough composition for producing rice noodles and a method for producing noodles. In particular, the noodle dough composition of the present invention includes rice powder, tapioca starch, and alginic acid. Based on 90 parts by weight of the rice powder, 4 to 6 parts by weight of the tapioca starch and 4 to 6 parts by weight of the tapioca starch are included. Existing noodles made of rice discharge much starch while being cooked compared to noodles made of flour to cause a problem in which a produced food has high turbidity and viscosity. In the present invention, however, the discharge of starch is minimized, so that the problem of rice noodles produced by an existing producing method can be solved. By improving the quality of rice noodles, it is expected that rice consumption is promoted and farm income is improved.</p> |
