<p>The present invention relates to a method for manufacturing black ginseng comprising: (a) a step for puffing dried ginseng; (b) a step for soaking the puffed ginseng in an acid solution selected among citric acid, malic acid, or ascorbic acid; and (c) a step for steaming and drying the ginseng soaked in the acid solution. The black ginseng manufactured by the present invention contains a high content of low molecular weight ginsenoside F2, Rg3, Rg5, and Rk1, and the low molecular weight ginsenoside F2, Rg3, Rg5, and Rk1 are easy to be absorbed in the body so that the black ginseng processed food manufactured using the ginsenoside can enhance bioefficacy. Additionally, the black ginseng manufactured by the present invention contains little benzopyrene, thereby being able to be taken safely even if taking the black ginseng for a long time.</p> |
