<p>PROBLEM TO BE SOLVED: To provide a method of manufacturing a powder tea capable of offering a powder tea, composed of green tea as a principal constituent, which is adequately diminished in bitterness and astringency, is lucid and light, good to drink in a delicious way without feeling thickness, and can contribute to health promotion too.SOLUTION: About 100 g of Tencha produced by a tea farmer, which is produced from tea leaves under a cover cultivated under the cover as a raw material by drying the tea leaves without crumpling, and thereafter removing leaf veins and stalks to be mesophyll only, are roasted in an atmosphere of 20°C×45% RH at a temperature of about 110°C for 10 minutes using a roasting earthen pan and a trivet. Further, the roasted Tencha is pulverized in an atmosphere of 20°C×45% RH into powder having a particle size of about 5μm, or about 100 g of powdered tea are roasted in the same way to obtain the powder tea.</p> |
