摘要 <p>PROBLEM TO BE SOLVED: To provide a manufacturing method of a frozen dessert having an inner layer made of frozen dessert material having flowability during filling, which is disposed inside an outer layer and prevented from leaking to the outer layer, even when the frozen dessert is subject to temperature change.SOLUTION: The manufacturing method of a frozen dessert includes the steps of freezing raw material mixture containing water and sweetener so as to form an outer layer and filling the inside of the outer layer with an inner layer frozen dessert material having flowability to be frozen so as to form an inner layer. The raw material mixture contains a thickener composition including carrageenan, locust bean gum, tamarind seed gum, guar gum, and starch, such that the raw material mixture has viscosity of 100 to 1000 mPa s at 5°C.</p>
