The invention relates to the wine-making industry, namely to a process for producing red wine.The process, according to the invention, comprises crushing of grapes with destemming, obtaining of squash, administration in the squash of young press wine, produced upon processing of another batch of grapes and chemically deoxidized to the pH of 3.6…4.0, maceration-fermentation of the mixture, draining and pressing of the drained pomace with the production of young free-running wine, which is directed to secondary fermentation and storage, and of young press wine, intended for administration in the squash upon processing of other batches of grapes. |
