The present invention relates to a manufacturing method of a fermented soybean block containing bamboo shoots, which has enhanced nutrients, taste, and texture. According to the present invention, bamboo shoots are added to a fermented soybean block so that people can take beneficial ingredients contained in the bamboo shoots. The manufacturing method of a fermented soybean block containing bamboo shoots comprises the steps of: soaking soybeans in water; boiling the soybeans soaked in water; crushing the boiled soybeans; making bamboo shoot granules by boiling and cutting the bamboo shoots; crushing enough a mixture of the boiled soybeans and the bamboo shoot granules again; molding the crushed mixture by compactly inserting the mixture into a mold to form the fermented soybean block; taking the fermented soybean block out of the mold; ripening the molded fermented-soybean block; and secondly ripening the fermented soybean block. |
