A lotus root jam manufacturing method of the present invention comprises the following steps of: pre-processing a lotus root; freezing lotus root paste which is pulverized in the lotus root pre-processing step; producing a first composition by adding sugar and water to the lotus root paste; firstly heating and concentrating the first composition; producing a second composition by mixing additive paste, sugar, and oligosaccharide with the first composition; secondly heating and concentrating the second composition; and more adding lemon juice to the heated second composition. |
