The present invention relates to an indigo natural dye converted into water solubility by reducing and fermenting indigo and a dying method using the same. The present invention provides a manufacturing method for the indigo natural dye fermented with malt comprising: an alkalization step (S10) of mixing 300 g of calcium carbonate and 100 g of indigo in 10 L of purified water and maintaining hydrogen ion concentration at pH10; a primary dye step (S20) of adding 50 g of malt as fermenting agents in an alkalized indigo solution and performing fermentation at 30-35°C for 6-12 days by performing stirring one through two times at every 24 hours; a fermentation dye step (S30) of mixing 9 L of purified water, 300 g of potassium carbonate and 50 g of malt in 1 L of indigo dye passing through the primary dye step (S20) and produces the indigo dye in bulk by performing fermentation at 30-35°C for 7-10 days while performing stirring one through two times at every 24 hours; and a dye completion step (S40) of mixing 30 L of the indigo dye passing through the fermentation dye step (S30) and 1000 g of potassium carbonate in 100 L of purified water and performing aging at 30-35°C for 6-24 hours so that a cloth to be naturally dyed is immediately put, and a natural dying method using the same.
