PROBLEM TO BE SOLVED: To provide a method for producing polyphenol in which chlorogenic acid compound, tara tannin, and the like of one kind of polyphenol are efficiently obtained in high purity from plant resources through a simple operation.SOLUTION: There is provided a method for producing polyphenol including steps of: esterifying carboxy groups in chlorogenic acid compound, tara tannin, and the like by adding an esterification agent capable of esterifying carboxy groups to a plant including at least one selected from the group consisting of chlorogenic acid compound and tara tannin; separating an organic phase from an aqueous phase by adding a water-immiscible organic solvent and water to the esters such as esterified chlorogenic acid compound, and esterified tara tannin; and obtaining the esters such as the chlorogenic acid compound, and the esterified tara tannin by removing the water-immiscible organic solvent from the organic phase obtained by the separation step. |
