The present invention relates to a method for manufacturing 10,12-dihydroxystearic acid and, more specifically, to a method for manufacturing 10,12-dihydroxystearic acid from ricinoleic acid using a recombinant hydratase derived from Lysinibacillus fusiformis and a composition therefor. The novel substance 10,12-dihydroxystearic acid can be produced with high yields by the manufacturing method in the present invention comprising processes for adding the ricinoleic acid to the microbial recombinant enzyme converting unsaturated fatty acid into dihydroxystearic acid and adjusting the concentration of the enzyme and a substrate, temperature, pH, and the concentration of a solvent. |
