摘要 The present invention discloses a fermented beverage using Dioscorea bulbifera, which is easy to drink by mixing Polymnia sonchifolia with the Dioscorea bulbifera, then aging and fermenting a mixture thereof and provided for young people or kids who do not like a viscid texture of the Dioscorea bulbifera to drink a soft Dioscorea bulbifera beverage, and a method for manufacturing the beverage. The fermented beverage using Dioscorea bulbifera and the method for manufacturing the same in the present invention comprise: a peeling step for washing and peeling Dioscorea bulbifera; a sugaring step for cutting the peeled Dioscorea bulbifera and preserving in sugar; a fermenting step for fermenting the sugared Dioscorea bulbifera at 18-20°C for 100 days; an aging step for removing mucin, a viscid glucoprotein, in the Dioscorea bulbifera for a certain period of time; a mixing step for mixing the aged Dioscorea bulbifera, fresh Dioscorea bulbifera, and Polymnia sonchifolia and making a mixture thereof; and a packaging step for adding water to the mixture and boiling, then packaging the boiled mixture by a fixed volume. The present invention has an effect of eliminating a feeling of repulsion in drinking the Dioscorea bulbifera beverage by removing the viscid mucin contained in the Dioscorea bulbifera so that the young people or kids can drink the beverage easily. Also, a sweet flavor of the Polymnia sonchifolia contained in the Dioscorea bulbifera beverage makes people of all ages and both sexes drink the beverage easily.
